Castellana, a Michelin Bib Gourmand restaurant that pays homage to the culinary landscape and culture of Northern Italy’s Piedmont region, will open in Central on 20 September 2022. Helmed by Piedmont-born chef Romeo Morelli, the new two-storey space in Club Lusitano, on historic Ice House Street, will continue the Castellana commitment to presenting Hong Kong gourmands with an impeccable Piedmontese culinary journey with refined craftsmanship.

Nestled at the foot of the Italian Alps, Piedmont is a world-renowned gourmet destination. Its native wine varieties, including in-demand Barolo, Barbaresco, Barbera d’Asti and Cortese di Gavi, are grown in the foothills surrounding Turin, with the stunning vineyards classified as UNESCO World Heritage sites. Piedmont is also famed for its incredibly rich and diverse culinary landscape: the Slow Food Movement started in the region, while the area is also home to some of the greatest truffles available anywhere in the world. 

Having garnered an impressive array of international experience that belies his 28 years, Morelli is a talented young chef who proudly showcases his native region’s abundant flavours and ingredients. His culinary creations are infused with a strong sense of place that feature his own creative Piedmontese twists to traditional and authentic regional dishes.

“We will be concentrating our efforts more on the rediscovery of Piedmontese traditional cuisine in the new menu. We want to add creativity and innovation to every dish. Having said that, we will continue to use the highest-quality ingredients available because this is what has set CASTELLANA apart from others. The new menu was created to appeal to guests’ palates in a metropolitan city like Hong Kong while preserving the legacy of Piedmontese recipes,” Chef Romeo Morelli said.

The new restaurant, designed by JJ Acuna / Bespoke Studio, boasts a chef-centered “cucina di casa” concept on the lower floor and an expansive dining room on the upper floor. Together, the spaces create an immersive Piedmontese adventure for guests. Seeking to create a sense of timelessness that references rustic antiquity with contemporary Italian design sensibility, the restaurant includes considered design elements such as wall-to-wall vineyard-inspired carpet, which takes one from spring to autumn. Burl wood rustica ceilings, painterly frescoed wall coverings, artful draperies, handcrafted Italian lightings, and youthful yet classic dining chairs evoke curiosity and spark the imagination of being immersed within the sensual and sophisticated wine and food destination of Italy’s Piedmont region.
