Veuve Clicquot launches exclusive Colorama pairing menu at Aqua and Armani/Aqua bars
What do yellow, black and pink have in common? Inspired by the vibrant colours of Veuve Clicquot’s signature cuvées: Veuve Clicquot Yellow Label, Veuve Clicquot Extra Brut Extra Old and Veuve Clicquot Rosé, Aqua and Armani/Aqua has exclusively launched a playful Colorama set menu in tribute to Madame Clicquot’s innovations, and in celebration of the 200th anniversary of her first-ever known blended rosé champagne.
From now until the end of August, diners can enjoy three exquisite Pantone-inspired champagne pairing courses created by Chef Alberto Hernández, and are encouraged to personalize the plates with your own imagination. If you were a fan of the freshest seafood like us, you would not be disappointed!
Here is a sneak peek of the playful three-course colour chart menu that is very picture-worthy:
Starter – Tribute to Yellow Label
Paying homage to Veuve Clicquot’s iconic shade of yellow, the first course dive you right into the sea of freshness. We absolutely loved the gigantic Japanese oyster and scallop ceviche with golden pumpkin puree. The saffron cream, presented in a little paint tube adds a delightful touch of sweetness to the dish.
Main Course – Tastes of Time
Think slow-cooked Norwegian salmon steak, Mazarra’s king red prawn with Osetra caviar. The bold stroke and flavour of squid ink jus add to the complexity of the dish, which is perfectly complimented by the timeless blend of six Veuve Clicquot vintages since 1988.
Dessert – The Clicquot Palate
Presented on an artist’s palette, this light, airy Amerana cloud cheesecake with assorted pink rainbow sauces (strawberry, raspberry, mango, white chocolate, grapefruit and pomegranate) is just working magic. We particularly enjoyed how the red fruit sauces match perfectly with the bursting sweet notes of Veuve Clicquot’s Champagne Rosé.
About the Chef
Presented Heralding from Salamanca in Spain, Chef Alberto Hernández brings over 25 years of experience form some of the world’s finest Michelin starred restaurants to Aqua Hong Kong. Loved for his colourful Spanish flair, for the Colorama menu he excels in expressing his artistic side by mixing colours, textures, flavours and ingredients:

Available both at Armani/Aqua in Central and Aqua in Tsim Sha Tsui, this three-course Colorama menu is priced at HK$1628. Given the menu is available for both lunch and dinner, we think it is perfect for an intimate dinner for two while enjoying the breath-taking view of Victoria Harbour through the floor-to-ceiling windows at Aqua.
If you prefer a light lunch with champagne pairing, opt for just the starter or dessert for HK$438; or main course for HK$780.
