This November, premium food distributor, Waves Pacific who serves the city’s finest restaurants with the best in meat, seafood and truffles, showcases ORA King salmon from New Zealand as well as the rest of its seafood portfolio to present an artfully crafted seafood menu celebrating ‘The month of sustainable seafood’ at 12,000 francs, a modern French Italian wine restaurant known for its innovative cuisine. Superior featured products include Ora King Salmon, Barramundi and Spanner Crab.
Internationally recognised, Ora King salmon is the standard bearer when it comes to King Salmon. It offers one of the longest and most extensive breeding programs whereby only the top fish are selected into the husbandry program. The salmon has a strict diet and is only fed non GMO feed sourced from sustainable authorities. Located on tribal lands in New Zealand, Ora King is there with the permission of the local tribe. No machinery or pumps are used and only the very best natural spring water is used in production. Ora King salmon is also recognised by Monterey Bay Aquarium’s globally respected consumer guide Seafood Watch® as the “Green” product which is the first and only ocean-farmed salmon to have achieved the Green/Best Choice rating from Seafood Watch.
Both Ora King salmon and the Barramundi, an Aboriginal word for the large scale fish, are known as the Asian Sea Bass is BAP (Best Aquaculture Practice) certified sustainable, while the Spanner Crab is wild caught in the pristine waters off World Heritage Listed Fraser Island. The Fishery is considered sustainable by the Australian Governments EPBC Act (Environment Protection and Biodiversity Act) and in 2017 Queensland Government enacted the Queensland Sustainable Fishery Strategy to help insure all fisheries are operated in a sustainable manner. Catch methods used by Fraser Island Spanner Crab ensure there is no impact on the environment from which the crabs are caught.
Starting at just HK$580 per head (add HK$300 for an additional three glasses of wine paired with each dish by the sommelier), this culinary journey of a luxurious four course menu begins with Canapes Trio and a complimentary glass of Sorelle Bronca, Superiore Docg Brut Prosecco from Italy. To whet your palette an offering of delectable Buckwheat Tart with fermented brassicas, cherry-wood smoked Ora King salmon, pine nut pudding and dukkah, Crab Toast pan fried sourdough, kimchi marinated Spanner Crab with roasted eggplant and Salmon Custard ‘Ora King’ Salmon tartare, celery root, mushroom puree, chives and pickled red onion.
The feast continues with a second course of delicately pan fried Australian Northern Territory Barramundi perfectly married with smoked coconut bisque, lemongrass, coriander oil, pickled cucumber and is finished with crispy buttered croutons. Pair this with a light bodied Lucien Crochet Sancerre ‘Le Chene Marchand’ 2016, Sauvignon Blanc from Loire Valley, France.
A tantalising main course features olive oil poached Ora King salmon fillet which has been lightly cured and slow cooked, Jerusalem artichoke, caramelized onion, tamarind and garnished with toasted nori – best accompanied by the medium bodied Clos Des Fous Latuffa, 2015, Pinot Noir from Maule, Chile.
To conclude the soul-satisfying experience, you will be served meticulously plated Cannoli as a crisp fried pastry with decadent coffee and ricotta cream, passion fruit and a perfectly baked cinnamon meringue paired with Da Vinci Vin Santo, 2009, Trebbiano from Tuscany, Italy.
